Hello my frugal friends,
I’ve been browsing for a while and wanted to share my frugal diet plan I’ve made. I’ve been massaging my diet plan for a few years now to find a balance of health, cost, and ease of making. Im fortunate that I don’t mind eating the same exact thing day in and day out. This diet costs me about $30/week, and covers all meals, except that I go out to eat once or twice a week with friends.
This diet plan is also vegetarian, could be vegan if not for the yogurt and eggs (I love me some eggs, tho). I believe it is also paleo? Correct me if I’m wrong there.
Breakfast: 3 eggs and half an avocado
Smoothie of kale/spinach/banana/blueberry/chia seeds
Lunch: 1/4 cup quinoa, jalapeño peppers, onions, 4 oz tofu, and hot sauce
2nd lunch: 1/2 cup oatmeal with flax seed and blueberries
Dinner: 1/4 lentils with black beans and 4 oz tofu
Steamed broccoli and carrots
Optional dessert: Plain Greek yogurt with fruit and hemp hearts
Snacks throughout the day: Bag of tree nuts that I’ve weighed out to 1 oz each (too easy to overeat them)
Fruit (2-3 servings)
