I’m living on a small island for half a year, I have access to most basic ingredients but everything is imported and expensive.

I’ve been eating mostly rice with egg, lentils/beans, peas and corn or pasta with tomato sauce and cheese. And mostly peanut butter, cheese or egg sandwiches for breakfast/lunch. I’m vegetarian and I’m noticing I’m not eating enough, I need some variety!

Any tips would be appreciated, especially (healthy) calorie rich things which are easy to prepare to eat for breakfast/lunch or as a snack.
