I've been struggling living off $65 a week while trying to maintain a gluten free diet. I'm a culinary arts student, so I have available to me all the equipment, knowledge, and spices I need.

I'm thinking that I should buy 2 staples a week, rice and a whole chicken to fabricate. Carrots, onions, and celery for a mirepoix, so I can make a chicken stock with the carcass and set it aside for other dinners. I predict the rice will cost $4, the whole chicken will cost $13, and the vegetables all together will cost about $10. That's $27, but it also guarantees I have enough protein for the week (2 drumsticks, thighs, and breasts. Wings will be thrown in stock.)

I'll need essentials, but I believe I can live off the dollar store for those right now. (Utensils, detergent, cleaning supplies, toilet paper, ect.) It's just that even though it's the dollar store, it still adds up when you can only live off $65 a week. I'm going to allocate about $15 to the dollar store to get essentials. That brings the total up to $42. I should also allocate $10 a week for CVS, in case I ever need medication.

That leaves $13, which I should probably spend on items like black beans, frozen mixed vegetables, and other vegetables.

I know it's always good to not max out your budget, but I don't really have much of a choice considering how expensive everything is out here.

Any help?
