tl;dr: $75 for four complete meals totaling 34 servings. http://ift.tt/2vzNIUD (Manhattan not included in cost)
Used some basic crock pot recipes for dinner and to meal prep leftovers. I make them throughout the week and it doesn't take more than 5-15 minutes for prepping each recipe before work, then probably 10-15 minutes to finish each meal. Finally I portion out the meals into prep boxes, keep half fresh and freeze the other half and we eat them for lunch or dinner for the next few weeks.
What I really wanted was to get the real cost of some good meals. Having something at home that I can grab for lunch or heat up quickly for dinner has saved us a lot of money in the last few weeks. So this outlines the cost (prices off my receipts). You can easily cut costs throughout, I just wanted to show a realistic (at least for me in a mid sized city in the United States West) way to budget cook and meal prep that is quick and easy.
Recipes loosely followed:
Chicken Fajitas: http://ift.tt/2uADG8v
Chicken Curry (used sauce instead of making my own because we had it on hand, added a lot more veg): http://ift.tt/2uTmHJG
The Pulled Pork and Italian Sausages are literally just meat, sauce and veg in the pot on low for 6+ hours, put them on a bun and add a side.
Sorry I don't take pretty pictures like the cool kids on instagram.
