Sooooo I thought I would share this.
During the first lockdown I bought heaps of seeds to avoid going nuts and because I usually enjoy gardenjng. Amongst them beetroots. They had nice big folliage.... But because the soul was not goid for it. At best I got marbles ! 😂😂😂
I remembered my grandfather used to make this amazing soup with radish leaves (you know the small red ones and the white and pink ones). After checking they were safd to eat aka not poisonous. I tried!
And man they were sooooooo good .... Kind of like an other species of spinash and when the stem were thick I would cook them like chards!
So what I did was every few days cut one or 2 leaves of every plant and let the others growa d get new ones! I had leaves for at least 3 months!
Soooo try it. It was delicious truely I did sauté them with garlic. When they are tiny add them with my salad it gives a nice colour too!
As for the repadish leaves. You put them with potatoes and a bit if onion put to a boil than mix. It us delicious (you can omit the onion part)
So less waste less cost and less money spent but it is delicious!
Bon appetit!
