I've grown a large number (30+) of chili peppers this season, I want to save them to use throughout the year in curries and stir fries. Ideally I'd like to keep them 'fresh' rather than dried.

I'm thinking chop them up and freeze in an ice cube tray, but I'm wondering if anyone has opinions on that, should I add water to the ice cube for example? Should I remove the seeds before freezing?
