Here is my contribution:
Ingredients:
1/3 box of spaghetti, preferably whole grain, 2 tbsp olive oil, 1 tbsp butter (optional), 1/4 tsp red chili flake, 1 clove garlic, minced finely, 1/8ish cup lemon juice, 1/4 tsp dried parsley, 1/4 tsp dried basil or oregano (optional), Salt and pepper to taste, Parmesan cheese to taste
Steps:
- Par-boil your pasta for 3 minutes.
- Reserve 1/2 cup of pasta water, then drain
- Add butter, olive oil, chili flake and garlic to pan, saute for 30-60 seconds on medium heat
- Toss pasta back in, let fry for 30-60 seconds
- Add parsley and other dried herbs
- Add lemon juice and pasta water, let reduce while stirring until emulsified
- Add salt and pepper to taste
- Serve in a bowl, add parmesan to taste
- If you want to get fancy, soak up the leftover oil with some nice bread.
Feel free to pair this with your choice of meat and lay on a bed of veggies if you so choose. The cost on this is maybe 50 cents a serving if I were to guess and it takes about 15 mins to make.
