When people don't want to roast a whole turkey, they usually buy a breast or a leg, which means there's a surplus of turkey carcasses around this time of year. My butcher says they mostly get sold to pet food companies. The thing is, they still have all the back and neck meat on them. This year I picked one up from him for less than $2 and made enough stock to make pozole for 8 people and still have about half of my stock left over.
