They'll have all the stuff you need (dishes, cutlery, etc) and working with brands and models that are built to withstand aggressive daily use. They usually price things relatively low as you are meant to buy like 100 of each, but some will sell small amounts to the general public if you ask. The guy at this store was also very nice and told about what models were popular with the fancier hotels in the area, what models need to be handwashed or which will last for 20 years looking almost new even though they have to go into an aggressive dishwasher multiple times a day (I picked that one)

The shop in my town's industrial quarter has porcelains, china sets, cutlery, glasses and pastry equipment from the nicest brands that I know of at a really nice price, like half of what it would be in the actual shop, making it the same price as the less-nice supermarket dinnerware.

Also, be careful not to be tempted into buying all of their neat restaurant gadgets. I woo-ed and wow-ed at giant fryers, molecular gastronomy equipment and so on, but those can get really pricey and I'm not really using any of that. But I am definitely getting the nice porcelain at supermarket prices :)
