For me:
Hagrid (Harry Potter)
Hagrid is a real simple guy, his life has never been about gaining more. Hagrid's day to day life was taking long walks around the Hogwarts grounds, maybe do something important for Dumbledore, and take care of the animals in the forest. He had simple pleasures. Being with friends, studying magical creatures, a good drink, and helping out around Hogwarts. He also had a small yet cozy house. Yeah he has a lot of stuff in it, but it's all related to a hobby or useful to his line of work.
Iroh (Avatar: The Last Airbender)
Iroh also had a lot of simple pleasures. Tea, conversation, sharing wisdom, Pai Sho, and music. Although he was once the crowned prince of the Fire Nation, in his older, wiser days, he was more concerned with living a good life, helping others, and having good experiences rather than gaining power and material possessions.
