So my partner and I started saving our scraps of veggies (onions, garlic, carrot, celery, etc) by freezing them and getting about a gallon's worth and we also buy whole chickens and he cuts em up.and we save the carcas and also freeze. Once we have a couple we throw in all the scraps and the chicken carcas into a pressure cooker (if you don't already have a pressure cooker it's amazing save time, water, and gas!) throw in some seasoning if you'd like then once the flavor has been sucked out of the bones and scraps you strain the whole thing and end up with delicious veggie & chicken stock that you can use right away or freeze to use later. All from stuff you might have thrown away! We use the stocks for soups, beans, rice, etc instead of plain water. :)
