Jeremy is 8 years old, and about 2 years ago we lost his mother. I was a stay at home father mostly, while she did a lot of the breadwinning. Normally, I can manage to bring in enough on my own to support us, but due to some medical expenses, our money has been short the past 4 months, and likely will be for the next year or so until I can find a job that pays higher than the two I have now. We eat a lot of chicken thighs and spinach usually, but this month I just can't afford it.

I know rice and beans are really cheap, but he's an 8 year old boy, and I try to keep him active so he'll grow into a healthy lifestyle, but I just don't know what foods can give him the nutrition he needs on 30 dollars. Our pantry is mostly empty aside from some corn flakes and a box of gushers for his lunches. Help please! What are some nutritious things I can make for this cheap! Smaller quantities can work if needed, I don't mind eating rice and beans, but I'd like him to be well fed.
