If you regularly make soup from your bone broth and/or vegetable scraps and find the last half of the pot lingering too long, add some additional chopped onion along with curry or chili seasonings (and anything else you want to add - possibly additional meat) to change it up enough to make it appetizing again. I generally do this on about day 3 and no longer have leftovers to toss later. It's also possible to do an Italian version, or goulash, or anything else you can thing of that spikes the flavor enough to be something new.
