Hey Frugal! So I'm trying to figure out what I can do to save money and not waste as much food.

So I'm trying to be healthy and cheap by not eating out. My SO and I eat out once a week for a nice relaxing date, but otherwise I eat at home. I typically buy frozen meals or soup for those times when I haven't cooked anything and need to bring food to work (which, including the commute I typically am out of the house from 11 AM to 10 PM), which is often.

So here's the deal. For a bit of background, I'm a petite woman with depression, so my appetite varies wildly throughout the week. Most of the time, I eat my two Eggo waffles in the morning and then whatever I've stuffed into my lunchbox for the day.

I've tried cooking food for the week and packing it each day, but I get tired of the food I've cooked after two days/meals. I usually end up just eating my frozen meals or soup and the rest of the food I've cooked goes bad and I have to toss it, which wastes a lot of money. About once every two weeks, I'll stop by at McDonald's to grab chicken nuggets and fries and chow down.

I am the type of person that will eat food on front of me, but if I don't have any food available then I just won't eat. Therefore, I also don't have the time nor motivation to cook every day and to make such a small portion.

I have tried making salads, but the lettuce or spinach spoils before I can finish the bag. I hate wasting food, but I just can't get the motivation to eat it.

Is there something I can do to get myself to eat (helps the depression) but also not get tired of a repetitive meal without eating out frequently?
