After moving back to the states from Japan, I found the prices of tofu were way higher then I was used to. I still wanted to eat tofu, just not pay $2 for one block of it.
It never occurred to me before that I could make my own soy milk, but a random youtube channel showed me the light and now here I am! Through research, I found that making soy milk would leave me with three possible food items: Okara, soy milk, and tofu.
When I first bought beans, I tried finding a whole sale seller online. I found a seller on eBay that had non-GMO beans in 20b bags.
20lbs for $30 ($1.50 per pound)
I ended up finding a local asian market that sells bags of beans at a much lower price. I’m not sure if the are GMO or not tho.
5lbs for $3.50( $0.70 per pound)
I think I’ll start buying from the asian market, but it will be a long time before I need to go shopping again since I bought 20lbs. If I’m cooking for only my self, 1/2 cup of dried beans is enough for me to have milk in my smoothies and coffee, and for some veggie burgers. So basically I have enough beans for about 80 weeks worth of soy milk, each week using $0.38 worth of beans.

The basics:

Soak the dried beans for 12 hours

Replace the water and massage the beans for a few seconds. Remove the floating bean skins until you get tired and give up.

Get the blender ready! 3 cups of water per 1 cup of beans. It make take a few tries to get it all done depending on how much you are making.

Pour some in a cheese cloth and squeeze it out over a large pot. Save the left over bean paste and repeat until you have squeezed all the milk out

Put the pot on the stove on med-low heat and stir it often.

When it boils, this is your chance to add anything you want! Like sugar, vanilla, or salt.

After it stops boiling, reduce the heat and stir often
After 20 minutes you are done!
After this you will have your own soy milk! I use the bean paste mixed with baked potato to make small soy patties and they are pretty good! The taste is half veggie burger, half french fries.
Other things you can make: * Have some lemon juice? Then you can make your new soy milk into tofu!

Have some starter yeast? Then you can make some awesome soy yogurt!

Hate soy? You can make nut milk the same way!

Want to add protein to almost anything, throw some okara in!
Results: While I am now able to make tofu, I tend to just drink the soy milk instead of going through the trouble of turning it into a solid. Instead of tofu, I use the Okara when cooking as it is a by product of making the soy milk and a great source of protein.
While it doesn’t take too much time, it does take some planning since you have to soak the beans. After soaking, I think it takes me around 30 minutes to make the milk. I usually study while the soy milk is on the stove, so I really don't think its that time consuming.
