Hope this post fits in this sub.
We are making preps for a total kitchen remodel and will be without a kitchen for 6-8 weeks. Don't have a specific start date yet, but it will probably be in later March into April. We're in MN, not exactly grilling season but can grill as weather allows. Grill has a side burner.
We have a crockpot, toaster oven, and... that's about it other than the grill. Prep space will be severely limited (practically nonexistent) as the dining room will be where all the appliances are going temporarily (though I'm starting to think the garage for the appliances just for the sake of having a space in the DR for some prep. We're getting new appliances, eventually, but not all in one shot. The garage is detached and not at all practical for any sort of food prep.
No microwave.
The main hurdles I'm anticipating is any sort of prep - chopping, mixing, etc. and then clean-up/dishes. I see paper plates and cups in our future. Not exactly frugal/environmental, but I've yet to find a way around it. We can certainly eat out from time to time, but I don't want to any more than once per week MAX.
Family of 4 - kids 6 and 11. They are already getting hot lunch at school so that helps (during the week).
I'm already thinking to get some stuff premade and frozen. But enough for an entire 6-8 weeks is a lot.
Looking for any tips, thoughts, ideas - particularly from anyone who has gone through the same thing with experience to share. Thanks!
