Not only is this an easy way to save money (beans are cheaper than tuna, obviously), but it's a great way to sneak more fiber into your diet.

More of a technique than a recipe, but here's one anyway:

-1 can garbanzo beans (homemade would be even more economical)

-1 can of tuna (juice drained and given to a feline friend)

-1 tbs mayo (can easily be replaced with greek yogurt, a bit of olive oil, or omitted)

-Couple of splashes of vinegar/citrus juice (whatever you have, I used a combo of apple cider and pickle juice)

-Half a cucumber, finely diced (apples, grapes, nuts, whatever!)

-Salt, pepper, and all purpose salt-free seasoning to taste

Smash up the beans with the back of the fork and combine with the other ingredients.

The garbanzo beans are very, very mild in flavor and soft in texture. You won't even notice they're there. You could even exchange the tuna for eggs or omit them both entirely. Use whatever you have on hand, just adjust the recipe to fit your tastes and the flavor profile you're trying to achieve.
