I just saw the post about Starbucks cold brew, and thought I'd share my recipe for Chai Tea Latte.
I take very little credit for this recipe. I mostly combined different online recipes until I found something that tastes like Starbucks. Feel free to tweak.
The initial spices will cost you about $20, but will last for months. I suggest checking amazon before you buy locally.
The tea is plain old Lipton loose leaf. If you're serious about your tea, other teas work well but you probably want to reduce the amount of tea you add. I find that Lipton does okay because it's inexpensive and the spices are the most important flavor note.
The ginger is the most expensive ingredient. It will usually cost you about $1/week to keep a knob of fresh ginger handy.
This recipe makes about 2 cups. If you want to make and store in the fridge for the whole week, double or triple the recipe and leave out the milk. Strain into a jar with a tight lid and store in the fridge. When you add milk the ratio should be 3:1, tea to milk.
I make this year-round. (I'm an addict.) In the winter, I add the milk and microwave. If steamed milk is a deal breaker for you, use an espresso machine to add it. In the summer, I add cold milk and crushed ice.
Chai Tea
7 green cardamon seeds
1 whole clove
1/2 inch cinnamon stick
1 star anise
3 black peppercorns
1/2 cup milk (any kind)
1-1/2 cups water
1 tsp sugar
2 tbsp orange pekoe tea
1/2 tsp ginger, finely chopped
With mortar & pestle, grind
--green cardamon seeds (Crack seed covers by grinding gently in m/p, then remove and return seeds to m/p.)
--whole clove
--cinnamon stick
--star anise
--peppercorns
Crush to fine powder.
(If you have a spice grinder, you can use that. If you need a mortar & pestle, you can buy one at Target for ~$10.)
Add milk and water to sauce pan on low heat.
Add crushed spices, sugar and tea.
Just before boiling, add ginger.
As mixture starts to foam, turn off heat.
Strain into mugs. Makes 2 cups.
