I'm looking for a solid chef's knife and ideally a shorter santoku as well. Probably 8" and 6-6.5" respectively. I've heard Victorinox for the chef's knife is usually a good bet but also looking to stretch my dollar on another brand if possible. I'm setting my upper limit on my budget at $85
Trying to also leave room in my budget for a steel and a cheap paring and bread knife (I wont use these knives very often so not looking for anything too fancy). Additionally need a solid cutting board/board mat but understand that might push my budget - not entirely concerned on having a fancy board though.
