I wanted to share a story about how I stretched a few ingredients to get the very most of them.
Starting with a 1/2 gallon of organic milk and a tablespoon of Greek yogurt, I cooked up a batch of yogurt. I strained the yogurt and kept the whey.
A couple of days later, my neighbor gave me some green coconuts. The meat was not ripe, but I got 32 oz. of sweet coconut water. At this point I was looking at the containers of liquid and wondering how to make the most of them. My husband mentioned that he loved the cucumber-lime Gatorade, but it was hard to find.
A light went off in my head, and I knew what to do. I put the coconut water and whey into the blender, along with a peeled/de-seeded cucumber, fresh-squeezed lime juice, honey, raw sugar, and a bit of salt. Next, I strained the pulp, and voilà, tasty energy drink!
The straining left me with a limey-cucumber pulp. I thought "I've gone this far, I'm taking this all the way!" I could have given this to my Black Soldier Fly Larvae colony and converted it into tasty treats for my chickens; but I preferred the challenge of keeping it in the kitchen.
I put the pulp in a jar, along with some balsamic vinegar, olive oil, dill, and more honey to make cucumber-lime vinaigrette. Surprisingly, it turned out to be delicious!
