Hello everyone, I’m reaching out for help with meal plans/ideas to help me budget and eat better. I’ve been trying to research a bit on my own, but things are incredibly stressful in my life right now so it’s been hard for me to devote the appropriate time and energy to this and I’m looking for any help I can get.

For some background, I have PCOS and I want to lose 30-40lbs, so I’m trying to reduce sugar, processed foods, and choose low GI carbs. I try to avoid dairy because I’m somewhat lactose intolerant, but yogurt and cheese don’t usually upset my stomach as much so I can mix those into my diet. I don’t eat cottage cheese or eggs, they tend to make me nauseous. I’m trying for meals that don’t take too long to make or can be prepped on the weekend, as I work full time and am going back to school in the fall. I’ll soon be in the process of a separation/divorce as well, so the less I can spend on food to build my savings the better.

I have easy access to Aldi and Kroger, and can occasionally make the longer trip to Walmart or Target if there’s a good enough deal. I try to mostly stick to one store to save on gas though, or occasionally order shelf-stable items online in bulk.
