Thank you all for responding to the post I made about trying to eat cheap and healthy without a microwave. I've gone through the comments and what basically keeps popping up is "buy X device and you can open an array of foods". X has mostly been slow cookers, pressure cookers, hot plates, electric skillets, etc. One of the things that was suggested to me was an instant pot, which basically is a single pot that is capable of doing the jobs of all the above. A store near me had an 8 Quart Instant Pot on sale from $110 to $35 so I was able to obtain one.
The issue is now that I don't know what to cook or eat. The pot does the job of a slow cooker, pressure cooker, regular pot, and a bunch more and I still have no idea what to put inside of it. What are the cheapest (yet still healthy) meals I can make using this pot? Bonus points if I can store the ingredients in a fridge.
