I've seen a lot of frugal wedding ring posts on here with moissanite stones or sapphires being go-to recommendations and looking on etsy / ebay / estate sales vs buying from a chain jewelry store. Budget is roughly $3000.

A bit of background on what makes the person that I'm buying the ring for unique: she is a very talented geologist and is obsessed with her mother's wedding band. Her father was a field geologist for a mine when they got engaged, and he found, polished, and set her a 2 carat yogo sapphire that he found in the mine when he was working. I know she doesn't want a diamond, but I've looked at yogo sapphires online and the better quality ones can go for five figures unset. Even if I did cough up that kind of money, I think it is more the sentiment behind the gift that made her mother's wedding ring special.

I guess I am looking for a creative suggestion. We are going on a climbing trip to the Wind River Range this summer and I was planning on proposing then. We could go to a mine in Montana together and pick out her rock together as it is nearby to where we'll be, but if there is any other suggestions for a geologically interesting wedding band, I would love to hear Reddit's thoughts!
