I just discovered the benefits of sardines (lowest in mercury by a mile, tons of Omega 3, wild caught, sustainable, protein packed) and their low cost per serving (between $1-2 per can). They've become my lunch staple. I have a suspicion the tuna lobby has pumped major money into silencing sardines and pumping up their fish, but who knows? I'm not a sardine lobbyist nor do I work for any of these brands.
I began this journey by buying three different brands: Wild Planet (skin on), King Oscar (boneless/skinless), and Crown Prince (boneless/skinless). Each can be found at Walmart.

Wild Planet: had no other option than skin on. They looked like little silver fish, tasted very fishy, and were overall not appetizing though they were edible. Both me and my wife's least favorite which surprised us because we buy their tuna.

Crown Prince: Less fishy than Wild Planet, appearance-wise they appeared more grey and fishlike, taste was OK.

King Oscar: Not fishy tasting, appeared like a white-fish fish filet which was nice, had a fantastic umami flavor like chicken. By far me and my wife's top choice.
Winner, King Oscar.
TLDR: King Oscar has the best taste and texture by a lot. Buy this first if you're just starting out for the best odds of enjoying Sardines.
