I know that there is a frugal sub for cheap and healthy meals, but this is not the healthiest frugal trick:
I hate soup. I also hate coming home and cooking dinner after working but I don’t like buying $15 premade casseroles. I save my best from scratch dishes for the weekend but this has saved me and my husband from cereal many times:
My favorite is 2 boxes of Zataran’s gumbo mix ($1.50 each), kielbasa ($2), and white rice (so little compared to cost- we’ll generously say $1).
The gumbo mix is VERY soupy. So much so that you can follow cooking instructions and add about 5-6 cups of cooked rice and it’s the consistency i would prefer, anyway. It also cuts into the spice which is a little much for me, though hubby disagrees. For about $6, we get 3 dinners for two and enough in between that I take it to work one day with an extra serving for my mother who works in the same building.
I have found a similar “recipe” that we call “Spanish Gumbo” which involves Spanish rice, canned beans, corn, and salsa mixed together.
These are probably the best tasting meals we can make for their price per serving. I love “cheap” foods (rice, beans, etc) but have a hard time coming up with ways to cook them so that we’re not just eating the same meals over and over. Any other ideas?
