We would be splitting the cow with a friend, each buying 1/2. It would be purchased from small rancher local to us, butchered, and ready in about 3 weeks.

I could arrange for freezer space in my existing chest freezer, as it is only 1/2 full right now due to space required for my non-profit volunteer work that ends this week. So as of this Sunday, a bunch of stuff will no longer be stored in my freezer. Also, we can use up quite a bit of existing frozen food over the next 2-3 weeks. So freezer space is not really a concern. It is an energy star appliance, so doesn't cost a lot to operate.

I don't typically buy higher priced meats, such as organic or grass fed. Choice grade, and on rare occasion prime, are what we typically buy. Having a large freezer, I take advantage of sales (ground beef between $1.99-$2.99 lb; tri-tip $2.49-$2.99lb; rib eyes <$5.99lb are my target prices). This meat will cost more, is allegedly superior quality ???, and will provide cuts I usually avoid due to higher cost, such as filet mignon and short ribs (Mmmmm). We are told we will receive 200 lbs of meat, so it averages to around $5.00 lb. 90-100 lbs of it will be ground beef and 20 lbs bones for stock or dog.

On the upside, I wouldn't be buying beef again for quite a while. I have asked if the beef is vacuum packaged. If not, I have a Foodsaver, but would need to order more rolls.

Is this really going to be worth the extra money or would it be better to decline this opportunity?
