You worked a 12 hour day for the last 7 days? I can relate.
Some easy recipe solutions-
Fried Rice, makes 8, ~400 cal servings.
Cook 8 cups(cooked) rice(4 cups uncooked), my rice cooker makes this a ~0 effort step. I'll leave my ricecooker on for a day so I have rice ready to use. Or I'll toss it in tupperware and keep it in the fridge.
Cook Chicken, As you get better, you will be able to cut 4 chicken breasts in about 2-4 minutes. Cook on the highest heat you feel comfortable. Chicken should be completely cooked in 7-10 minutes.
Add veggies, I like frozen because they are quick. Sometimes will add fresh. Go crazy on these, 1-2lbs of veggies for sure.
Add rice, hot or cold.
Add fish sauce, oyster sauce, and sugar. 2-3 tbsp of each. Taste as you go.
Top with lime juice and cayenne pepper.
This takes about 20 minutes to make, and ~5 minutes to clean up and put into the fridge. You can make this even higher calories(and delicious) by putting a stick of butter in(No oils were added to the original recipe). Adding eggs and more veggies are always encouraged.
We basically do this recipe at least once a week. it feeds us for 2-3 days and can be microwaved in less than 2 minutes. Hows that vs McDonalds drive-through?
Bonus tip: Slowcookers are incredible.
