I’m really into cooked chicken but my place doesn’t have an oven to roast a good chicken. The local stores only sell chicken breasts. I decided to make a large pot of Vietnam style Pho to save money. Based on the following You Tube link

But I freeze the stock for later and shred and portion the chicken in aluminium foil store in the refrigerator and use throughout the week (in fried rice, pasta, soups etc).
Today for lunch I ate dry cooked noodles, chicken with Chinese hot oil sauce and a side dish of Pho broth with drop egg soup.
