this year for thanksgiving, like every year, we bought a turkey for thanksgiving. but instead of cooking the entire turkey, we carved out both breast as it's just the two of us and we generally don't eat much of the rest of the turkey. we prepared and consumed one breast and standard sides and froze the other breast and leftover sides.
we made turkey pho with the rest of the turkey carcass and today, xmas, and for lunch, we cooked the other breast and leftover sides. three separate meals (more if you counted the leftover turkey sandwiches) with nothing going to waste.
this will definitely be our MO in future years.
