Hi! I'm a teacher between jobs for the summer. I have temp work that pays well for temp work, but it's not quite enough to cover me so I applied for food assistance. I've been issued about $400 for the summer. I used the first $100 today to stock up on stuff I regularly need, including extra snack for my preschool-aged daughter. I'm wondering what to do with the rest and I'm thinking about getting stuff to make freezer meals for my crock pot but I thought I'd ask you all first.
I'd like to make healthy choices with the money, but I know produce won't keep well. I have a garden with tomatoes, strawberries, lettuce, and green beans so we'll do fine with those items.
Usually when people go to the cheapandhealthy subreddit with similar questions, the usually go right for the dry goods. My kid isn't unhealthy but I can't just buy beans and rice and expect her to eat that all summer because she just won't. Do you all have any good ideas? Wise food choices with benefit money for a single mom and little kid. What's stuff that I can buy in bulk up front that'll last? Go!
