Just wanted to drop my newest experience here, maybe it will inspire someone who like ourselves were looking for something different.
The rural touristic rental house was a place we googled - so instead of going abroad as we always do we decided to give it a spin, mostly because we wanted to save some money for the planned kitchen renovation.
It was insanely good. Like, wow.
People who run it are a friendly, kind couple who also own a bunch of animals, and even for introverts such as ourselves managed to befriend the rest of the inhabitants.
The house is literally in the middle of nowhere, so unless you want to spend your days on wifi you have mostly slow life stuff to do - bike, hike in the forest, sail on one of the lakes in the nearest neighborhood, read books, do nordic walking or fish. We even solved sudoku and crosswords!
What made it special were the owners - they made a cozy place with a joint kitchen/living room that all their guests, friends and themselves hang out.
So you cook food and eat breakfast there in the morning, then hang out, in the evening everybody would sit down, discuss what movie the whole house (a group of strangers who just happened to stay in the same place) wanted to watch.
If the weather was nice the owner would make a fire and invite everybody for a night under the stars. One person bought local snacks, somebody else wine and everybody got along with each other, although the political views were quite different within the group.
You could feed sheep, pet the dog and cats and bring your own animals. The two of us, a childfree couple took a canoe and was joined by a mom and two daughters and it was really nice and fun, too.
If you wanted to do nothing you had hammocks and sun beds to chill next to a mini lake.
The whole trip was way less expensive than abroad travel and we are booking in two years in advance because next year is already mostly booked.
TL;DR Tried simple holidays and loved every second.
