Forgive me if this comes off as a personal rant, I'll try and make it as general as possible.
I feel as though a lot of older people (I mean, I'm 25, and I'm mostly targeting the parents of my generation, so perhaps people aged 50+?) see simple living as not living life to its fullest.
Of course, there are older people who embrace the philosophy, but perhaps it's a generational gap where older people haven't fully embraced anti-consumerism or even just the idea that some people are perfectly content to spend a whole day reading.
Personally, I'm in a relatively unique position where I'm in a separate state from most of my friends temporarily, so it's hard to demonstrate that I can form happy memories perfectly well, when I'm in this situation to help my parents out in this separate state, but I'd even disagree with the idea that we absolutely need other people to form these positive memories.
I guess, in summation, I wonder how everyone actually lives a happy life, and how I can refute the idea that living simply leads to an unsatisfying life.
