So I have been browsing this subreddit for a long time and I see very few tips on saving on meat that are more affective ban people are utilizing. So, as a butcher, here are a few things to keep in mind.

The single biggest tip is to take advantage of dates. Every morning when I get to work, I have to mark down the meat that goes out of date the next day by 40%. The meet is still perfectly fine, especially if you are going to buy and freeze it.

Keep a watchful eye on large cuts of meat. These do not sale as fast as most retailers anticipate, so they become short dated very quickly. For example, the DC for my store shipped us several cases of Boston butts. They were already on sale for $.99 per pound rather than the normal retail of $2.19 per pound. They did not sell very quickly due to many people buying hams and turkeys for the holidays say I still had around 30 to 35 butts left. They were going out of date in three days, so I had to mark them down to $.60 per pound rather than the full retail or sale price.

Get leaner cuts of steaks. When you eat a steak, most people cut the large chunks of fat off of the outside edge of the steak. Many retailers have a policy to leave a certain amount of fat along the outside (about 1/8") because this is less profit loss. However you can ask for a steak to be cut with no fat along the edge. This can take a $7 pack of steak down to about $5-$6 depending on the price of the cut and the amount of fat.

Ground beef. If your market grinds their own beef, it is dated for only 2 days. Typically, they will not mark down the ground beef until the night before it expires. However, you can get, for instance, a $8 pack of 85% ground beef for about $5 of you catch it on the dates. Most retailers rotate the ground beef that is on sale and if your retailer has small packs of ground beef (about a pound or so) and family packs(3-5lbs), look at the big packs. They are usually the same price per pound, but not many people will buy the big packs.
