Do yourself a favor and skip retail cookware altogether.
It's all horribly overpriced.
Instead, check out Vollrath Tribute industrial cookware.
It's the same clad design as All-Clad, but built for commercial kitchens. Functionally, it's the same or better. The durability is definitely better. The only trade-off is that it's not as ooh-aah flashy.
But, for the performance, value, and price point, it can't be beat!
