I usually struggle with meal prep and get lazy and just eat ramen or beans on toast for weeks on end. The guilt of being deficient in probably every vitamin ever is getting to me. I often see cheap healthy meal ideas on here but they require a ton of time to prepare... In the evenings after work I'm just too drained to cut veggies and stand in front of a hot plate for 30-40 minutes only to have a huge clean up job afterwards.

Today I had an idea and made couscous with a bit of butter, and in a pan I fried a chopped onion with a bunch of halved cherry tomatoes, seasoned it with some salt+pepper+Italian spices and put it on top of the couscous with some grated cheese. All in all it took under 10 minutes, is super cheap and is the healthiest thing I've eaten since xmas. It was also surprisingly good!

Anyone else have any go-to cheap quick healthy-ish meals?
