The other day I made some great tacos for dinner but found to my chagrin we were out of salsa. I was not going to go out to the store just for that. So I started thinking: don’t they make salsa out of cooked tomatoes? I had a can (14 oz) of diced tomatoes, and added minced (microplane) garlic (two large cloves), green onion, oregano, cumin, taco seasoning, and a pickled jalapeño (didn’t have any fresh). Mixed it up and it was surprisingly good. The next day it was even better. I have made it a few times since then and it is much cheaper than even Aldi’s salsa, and you can customize the heat however you like. I like to add sour cream or mayo (don’t judge me) when I eat it with tortilla chips.
