I’ve seen several posts from students or young broke folks looking to stretch their limited cash on meals made at home. Overnight Oats is (are?) something even the laziest of people can assemble in a big bowl and eat on it for the week— breakfast or otherwise.

My basic berry version is as follows:

Dump some frozen mixed berries (Aldi) into a bowl, microwave to thaw and mash haphazardly with the back of a fork. Pour dry rolled oats (Aldi) on top of fruit “jam” you’ve just created. Cover with [nut] milk or water. Mix, cover, set in your fridge overnight. Done!

You can microwave a bowlful or eat it cold. Add whatever you have— chia, flax, honey, jam, nut butter, nutella, chopped nuts, raisins, pumpkin puree, apple sauce, yogurt, protein powder, anything! I tried and promptly failed at my first homemade muscadine jelly attempt, but the syrupy goop i got is DELICIOUS in oats, so save all your scrap goodies and see what concoctions you can create! Great for your heart and digestive tract + will keep you full and energized for your day.

Happy feeding!
