Carrots, potatoes, onions, ... Almost anything with seeds (apples don't work afaik, doesn't make sweet apples), herbs like basil. I don't have a comprehensive list for you.

I have several onions going. When you get near the end with the root (cut from the other side, keeps it fresher longer too) just plant it. That works a lot of stuff.

You can just try and if doesn't work then you're composting! That's the other thing I just did, I made a 5gal composting bucket (which ig just means drilling holes).

And if you don't grow and you don't compost, keep them veggie scraps anyways cause you can make vegetable stock with them! It's handy just to keep a gallon freezer bag with the scraps till you have enough for stock.
