They are dirt cheap, delicious, healthy, versatile, and have to sit in the fridge for waaaaaaay longer than most produce to go bad. Chop them up for a quick cole slaw/salad. Sauté them as a quick tasty vegetable side for dinner. Dip a carrot in some peanut butter for a quick snack. The possibilities are endless. I started buying them a little while ago and now they are a primary source of nutrition for me. I eat them with everything. I feel a weird amount of love for these humble vegetables but I am proud of it!
