Store food scraps in the freezer until you are ready to make the broth. Ask your local butcher if they have bones that they throw away or can be sold at a cheap price like $2 a pound. Or purchase cut up chicken, take out the meat and use the bones.

Put everything in a large pot, add water, cook until the bones fall apart, at least 4 hours. Strain then store in containers in the freezer. You can use the broth to make whatever soup you like.

Examples of food scraps - yellowed leaves from your leafy vegetables, the parts of peppers that you don’t eat, skin of a ginger, bones from ribs, chicken wings, etc.
