Years ago I stumbled upon Chuck Eye steaks. They are cheaper than the traditional rib-eyes or other cuts, and taste great to me. According to some articles I read, they actually have some part of the rib-eye in them so that's why they are tender. Chuck Eyes are best if well seasoned, seared quickly and served medium rare. Don't get it confused with Chuck Blade or other chuck names, Chuck Eye is what you want. There's only 2 per cow and more people are finding out about them. If you ask your store butcher, they may set aside some for you. Even though they're called 'poor man's ribeye', I actually prefer them over the more expensive steaks.
