I know what you're thinking; "I'd rather chew on a take-out pizza box" BUT WAIT!

It is apparently one of the super foods and it is possible to enjoy this winter joy without being unsure if it's kale or the supermarket paper bag it came in!

First, it is so easy to grow. If you have a bit of room to grow winter veggies, do yourself a favour and try it. I have been clipping kale all winter long here on Vancouver Island - it's not THAT mild here.

After you cut the leaves, de-vein them - take out that stalk that runs down the center. Chop it into bite-size pieces, wash and thoroughly dry it. Now for the interesting part that will make all the difference. Pour a bit of extra virgin olive oil into the palm of your hands and rub your hands together.

Avoid the temptation to make this awkward.

Now, gently massage the kale leaves with your oily fingers. I whisper softly to it while doing this, but feel free to use your own method. You will find as you massage your kale that the leaves turn much darker in colour. Add a little salt and some lemon juice and massage a little longer. Let it sit for about an hour. I add diced fruit like plums or apple, diced broccoli, shredded carrot, diced onion, celery, hell whatever is in your veggie crisper. Cube up some feta - or any soft cheese.

This is possibly one of the best salads I've ever enjoyed.
