I collect veggie scraps in a plastic bag in my freezer. Two bags. One for the mirepoix vegetables (carrot peels and tips, onion ends and skins, and celery cores and leaves). One bag for all other veggie scraps like broccoli stalks, pepper cores, wilted spinach, dried out mushrooms, etc.

When the bag gets full I just throw the first bag in a pot with some chicken bones/carcass and water for chicken broth or just throw the second bag in a pot with water and some herbs for veggie broth.

Then before going to bed, put it through a sieve and into a freezer bag or mason jar. No sodium, no artifical colors, all flavour, costs me the energy to boil the water and to cool/freeze the veggies/broth.
