As I read posts by people looking for simpler eating plans, I notice lots of talk about what to do with left overs, not wasting left overs, etc. So I just wanted to suggest my way of doing things which involves not having left overs in the first place.
I should say, I only cook for myself which no doubt makes this easier. When I am ready to cook my meal, I decide in advance how much I want to have on my plate and I only cook that much. In the beginning I was sometimes a bit off and ended up eating more than I wanted but after a few tries I figured out the right portion for me.
I buy foodstuffs that allow me to take just what I want for a particular meal. For example, if I buy a bag of string beans, I only cook as many as I'm going to eat in that meal. If I want pasta, I only boil the amount that I will eat. (I've figured out exactly how much spaghetti makes the perfect serving size for me.)
If you're cooking for two, double the amount. Adjust for whether your dining partner eats more or less than you do. When I cook pasta for me and my dh, he eats about twice as much pasta as me, so I triple the amount I normally make for myself.
Kids might be more difficult, but I suspect that once you know how much your child eats, you'll get it right. The trick is to serve the meal like in a restaurant: make everyone a plate with the amount they normally eat. Serving family-style will probably result in some people overestimating and others underestimating the amount they will eat. It also creates more dishes to wash.
