At my local Asian market they sell tteokboki which is rice cakes in spicy sauce. It’s not entirely vegetarian as it’s made with fish sauce.
It costs about 5 dollars and there are 2 servings. Once you finish the rice cakes there’s a lot of sauce mixed with scallions and lettuce etc. A lot of people throw it away but if you stir fry it with rice and egg it tastes amazing and there’s enough for around 3 servings.
On the same note if something is packaged in oil (sundried tomatoes etc) save it for cooking, it saves money and adds flavor.
