Ingredients:

1 pack of dry kidney beans ($1.62)

A couple handfuls of dry rice, and some leftover rice I had in the fridge (< $.75 out of a 20lb dry bag)

1 pack frozen spinach (12 oz - $1)

2 carrots, diced (~$1.8)

2 onions, diced (~$1.76)

2 or 3 oz of dry granulated garlic (< $1)

3 tbsp of chicken base (< $.25 worth)

a good dash of canola oil (~$.20 worth)
Total cost: ~$8.38
It made more than 250oz of soup
Preparation:

Boil dry kidney beans for 10 minutes (they have toxins that need to be removed by boiling).

drain kidney beans and rinse with fresh water

add all the ingredients and bring to a boil, then lower it to a simmer for a couple hours. stir periodically and add water if necessary as it boils off.
That's basically it. It's really simple. This will be my dinner for the next week, each bowl with 2 toasted cheese, which cost about $.50 each to make at home.
Total cost of each meal? <$1.50 for homemade soup with 2 toasted cheese.
This is my staple right now. For my other meals I've been pre-preparing homemade hamburger helper and spaghetti and freezing it in batches. Really nice to be able to thaw out some homemade pasta whenever I want, and the soup is always there to mix it up.
