First time poster here. Planning on quitting my job next year to go back to school, so I've been lurking here for good ideas, learning how to be sensible with my spending. Turns out, food is the key area to reduce for me.

Pretty proud of my cooking habits recently. Thought I'd share.

I bought 2 Whole 5 Lb chickens - $10 (Costco)

Here are the 5 meals I got from this (Each meal is for 2 adults- me and my sig. other)

  1. (Chk1 1/2 breast + 2 Legs) Chicken and veg curry over riced cauliflower.

  2. (Chk1 2 wings + 2 thighs) BBQ chicken grilled over home made lump coal, served with jalapeno corn bread and steamed veg.

  3. (Chk2 whole except for spine) Spatchcocked Chicken, baked in a cast iron skillet over a bed of my hedge (which happens to be rosemary). Served with mixed veg gratin.

  4. (Broth from Chk1 carcass + Chk2 Spine + veg scraps from 1-4, leftover shredded chicken from 3) Chicken Consomme with matzoh balls, shredded chicken and julienned veg

  5. (Broth from Chk1 carcass + Chk2 Spine + veg scraps from 1-4, 1/2 breast from chk1) Chicken Risotto

Prep:

Chicken # 1: I used this Gordon Ramsey video to separate it into portions.

Chicken # 2: Spatchcocked

Obviously in addition to the chickens, I used other ingredients from my kitchen/garden - rice, flour, cornmeal, onions, garlic, a cauliflower, frozen mixed veg, eggs, block of local cheddar, peppers, herbs and spices. Hard to say exactly what the cost of each meal was, but I'm estimating <$5 per person per meal.
