I've been making epic omelettes of late, but my beloved cast iron is not the best tool for the job. Too thick, eggs stick, then i mess up the seasoning having to clean it too hard.

I want a thin pan, shaped well so three eggs become uniform and round and i can fold it in half without dicking it up.

I basically want a pan that makes a better omelette than im capable of with my current equipment.....and a spatula that is thin but not made of a material that will damage the non stick coating.
