We all know the humble dried bean is deliciously frugal, but sometimes I get into a bean rut. What's your favorite way to make them?
Here's mine:
- Soak pinto beans overnight
- Rinse and dump into slow cooker
- Chop up 1 onion, 2 jalapeños, 5 garlic cloves and add to beans
- Add one can of diced tomatoes and a spoonful each of chili powder and cumin
- Cover with water or chicken broth and put on high for 6-8 hours or low for 10
This can be slopped into tacos, onto a salad (just shredded lettuce, radish and carrot), as huevos rancheros, smashed up into a bean dip, stuffed into bell peppers with rice and broiled, or just in a bowl over rice and squash with a fried egg and avocado on top!
